Crunchy, colorful, and flavorful, this Winter Kale Salad is the perfect add to your seasonal menu. It features winter favorites like vibrant kale, sweet potatoes, pomegranates and carrots. The pomegranate arils and air fried sweet potato croutons add a delicious and unique touch. This salad pairs so well with a light drizzle of vinaigrette or a citrus-based dressing. Prepped in just 10 minutes, this salad can be an easy appetizer or side to pair with main protein dishes like garlic roasted salmon or balsamic chicken. Winter Kale Salad Recipe

Ingredients

  • 1 small bunch kale, chopped

  • 1/2 cup canned chickpeas, drained

  • 1 chopped bell pepper

  • 1 small sweet potato, diced small

    • Seasonings of your choice to season the sweet potatoes (salt, pepper, garlic powder, chili flakes, Italian herbs)

  • 1/2 cup cucumber, diced

  • 1/2 cup shredded carrots

  • 1/2 cup pomegranate arils

  • Oil 

Dressing: You can choose any vinaigrette-style  or citrus-based dressing of your choice!

 

Easy & light homemade dressing: Adjust to your liking 

  • 2 tbsp. olive oil

  • 1 tbsp. citrus juice like lemon juice ( I used a splash of Garden of Flavor Turmeric Tonic Juice)

  • 1 clove fresh minced garlic or 1 tsp. garlic powder and 1 tsp. Italian herbs, salt & pepper to taste

  • 2 tbsp. store-bought Italian dressing

  • 1 tbsp. honey

Directions

  1. Toss sweet potatoes in the seasonings of choice and oil.  Air fry for 15 minutes at 400 degrees F or until lightly crispy and golden brown.  Check in between time to prevent burning. 

  2. In a salad bowl, layer over kale, vegetables, chickpeas, pomegranate arils, sweet potatoes .

  3. Add your choice of vinaigrette or add all salad dressing ingredients to a bowl and mix well.  Drizzle over salad and toss the salad to coat all ingredients. 

Recipe Notes:

  • Store extra in in the refrigerator for 3-5 days.
