Sweet Potato Fries

Who can say no to some nice seasoned fries?!

Since I purchased my handy dandy Air Fryer about a year ago, I have been indulging in my favorite comfort foods like fries and crispy chicken in the convenience of my home with minimal effort.  My favorite part about making homemade fries, is that they can be so nutritious. Sweet potatoes are a good source of fiber, potassium, B vitamins, vitamin A, vitamin C, and even provides some protein.  I also did not need to rely on adding excess sodium and oil to create these scrumptious savory fries. I used a mix of dried herbs, garlic powder, pepper and a bit of olive oil to season the sweet potatoes.  These are the perfect go-to munch for movie nights and is a perfect side to pair with various dinner dishes.  I love to enjoy these fries along with homemade salmon burgers!

Garlic & Herb Sweet Potato Fries (Air Fryer Recipe)

Cook Time: about 20 minutes

Ingredients

  • 1 large sweet potato, chopped in 1/4-1/2 inch pinky finger sized slices(try to cut them equal in size)

  • 1 tbsp. dried oregano

  • 1 tbsp. dried parsley

  • 1/2 tbsp. garlic powder

  • 1/4 tsp. black pepper

  • 1-2 tsp. oil (I used avocado oil)

Directions

  1. In a bowl, combine the sweet potato slices, seasonings, oil. Try to coat all the sweet potato slices.

  2. Spread the sweet potato fries evenly into the air fryer basket.

  3. Cook for about 15-20 minutes at 380°F, tossing in between time. Cook for more or less as needed until tender & golden brown (thin fries may take less time than thicker cuts).

  4. After the fries are done, sprinkle over more seasoning if preferred. These can be enjoyed with or without a condiment.  I paired my fries with a herb & pepper chutney as shown in the picture. 

 

Recipe Notes:

  • Make sure to check fries in between the cooking time to prevent burning.

  • If you want the fries to be extra crunchy,  soaking them in cold water for at least 30 minutes before cooking, drying them well with a towel, and adding cornstarch to the seasoning mix can help.

  • It is important not to over-crowd the fries in the basket.  If you want to make more, cook in batches.

  • You can store extra in an airtight container in the fridge for 3-5. days.

  • You can reheat the fries in the air fryer for about 2-3 minutes at 350°F.
