Granola
This quick and easy 5-minute granola is a perfect breakfast yogurt or oatmeal topper, a satiating midday snack, & even a crunchy add for your fruit salad! I am all about healthy, quick, and easy recipes that help me save both money and time. Although I do occasionally buy selective brands of granola from the store with whole food ingredients, most other options I have come across are pricey and contain loads of added refined sugar. I always instead look for great deals on bulk nuts, seeds, dried fruit, and oats to make a batch of my own granola.
No-Bake Strawberry Granola Recipe
Servings: Adjust ingredients for a small or big batch. 1 serving of granola is 1/4 cup.

Ingredients:

1/2 cup organic old-fashioned oats

1/2 cup almonds

1/2 cup pistachios

1/2 cup unsweetened coconut flakes

1/2 cup freeze dried strawberries, chopped

1 tsp. vanilla extract

Pinch of Himalayan salt

1/4 cup honey
-
1 tsp. ground cinnamon

1 tsp. coconut oil
Directions:

Toast the oats on medium heat with a hint of coconut oil until slightly golden brown.

Chop or toss the almonds, pistachios, oats, coconut flakes in a food processor and pulse 2-3 times. or until slightly crushed. You may need pause to stir the nuts in the food processor between each pulse.

Pour the granola mix into a bowl and stir in crushed dried strawberries, cinnamon, vanilla, honey, and salt. Toss to combine all the ingredients well & enjoy!
Recipe Notes:

You can store any left over granola in an airtight container in the fridge for about 3-5 days. I like to store my granola in a glass mason jar with a lid. You can also store this granola in a freezer bag for up to a month.
