First up, Saucy & Spicy Pumpkin Penne. This dish perfectly balances the creamy richness of pumpkin with a spicy kick of chili flakes. It’s a comforting yet invigorating pasta that warms you from the inside out—a must-try for any pumpkin spice enthusiast.

Ingredients:
1 cup penne pasta (I used Tolerant Foods lentil penne)
1/2 cup 100% pumpkin puree
1/2 cup tomato sauce
1/4 cup water
2 tbsp. plain low-fat yogurt
2 garlic cloves, minced
1 tbsp. oil
1/2 tbsp. chili flakes
1 tsp. onion powder
1/2 tsp. coriander powder
1/2tbsp. dried parsley
1/4 tsp. each of salt/pepper
1/2 tbsp. lemon juice
Directions:
Cook penne pasta according to package instructions.
Heat oil in a pan on medium to low heat and start sautéing garlic until fragrant, 30 seconds.. Then stir in pumpkin puree, water, yogurt, spices/seasonings except parsley, and tomato sauce. Let this sauce simmer on low heat for about 15-20 minutes, stirring occasionally. If the sauce is drying up, add a splash of pasta water and cook for 5 more minutes on medium-low heat.
Add the pasta to the sauce, stir, divide into serving plates, and sprinkle over dried parsley.
Recipe Notes:
Store extra in an airtight container in the refrigerator for up to 4 days.
You can reheat the pasta in a pot or microwave with some more tomato sauce and/or a splash of milk to prevent the sauce from drying out.

For the coffee lovers out there, Pumpkin Spiced Cold Brew is an absolute game-changer. Infusing your cold brew with pumpkin puree, a hint of vanilla, and a sprinkle of pumpkin pie spice creates a refreshing yet cozy beverage that’s perfect for those who love their caffeine with a seasonal twist.

1 cup milk of your choice (I used 2% dairy. For dairy free, you can choose almond, oat, soy milk varieties)
1 cup cold brew coffee
1 tbsp. pure pumpkin puree
1 tbsp. 100% maple syrup
1/2 tbsp. vanilla extract
1/2 tsp. pumpkin spice blend or cinnamon powder and nutmeg
Ice
Optional topping: whip of your choice (dairy or dairy-free)
Instructions:
Pour milk, cold brew, maple syrup, pumpkin puree, vanilla into a high speed blender until smooth and frothy.
Pour the blended cold brew over ice, divide and sprinkle over pumpkin spice or cinnamon powder and nutmeg, and an optional whip topping.
And for something soothing and golden, there’s Pumpkin Spiced Golden Milk. This warming drink combines the anti-inflammatory properties of turmeric with the delightful flavors of pumpkin and spices. It’s like a hug in a mug, perfect for winding down after a long day.

Wet ingredients:
2 bananas
1 egg
1 tsp. banilla extract
1/2 cup butter, melted
3/4 cup pumpkin puree
1/2 cup brown sugar
Dry ingredients:
2 cups flour
1 tsp. baking powder
1/4 tsp. Himilayan salt
1. tbsp. pumpkin pie spice
Granola for topping
1. In a large mixing bowl, combine wet ingredients. Make sure banana is mashed through.
2. Pour the dry ingredients over the wet indrients and combine well.
3. Grease a bread pan or lay a sheet of parchment paper with flap slightly sticking out for easy removal of the pumpkin banana bread once baked.
4. Pour the batter into the baking pan. Sprinkle over granola and bake for about 50 minutes or u til golden brown and cooked through. Insert a knife or toothpick in the middle and make sure it comes out clean!
5. Let ot cool down before eating. Enjoy as is or with a spread like a chocolage hazelnut spread!
