As soon as May begins, I get into full picnic mode! It is my all-time favorite way relax under the sun while enjoying some nourishing & delicious snacks. Cold sandwiches, fresh fruit, and little pastries are some of my go-to picnic menu choices that are mess-free, compact, and easy-to-make in bulk to share.
Recently, I have been making a creamy hummus chicken salad sandwich has been a crave-worthy cold sandwich to take on picnics. I swapped the mayo used in the classic chicken salad sandwiches with homemade hummus which made the chicken salad so creamy and filling. Using seasonal fruits like kiwi and berries, I also have been pairing the sandwiches with Greek yogurt parfaits and mini daisy puff pastries. So fun to make and refreshing to eat out in the fresh spring/summer air!

Creamy hummus & chicken salad sandwiches
Mini strawberry jam daisy pastries
Kiwi berry Greek yogurt parfait cups

Hummus Chicken Salad Sandwiches- 4 servings
2 cups shredded seasoned chicken
1/4 cup finely chopped celery
1/4 cup finely diced red onion
1/4 cup finely diced yellow bell pepper
3/4 cup original hummus
1 tbsp. mustard of choice
1 tsp. dried parsley
1 tsp. garlic powder
Salt & black pepper to taste
Option, dash of hot sauce and chili flakes
8 Whole wheat bread slices or other bread of choice
Directions: Mix all ingredients in a bowl except bread. Stir until well combined. Chill for about 30 minutes in the refrigerator. Once done, enjoy making your cold hummus chicken salad sandwiches!
Mini Strawberry Jam Daisy Pastries - Makes about 5 servings
Homemade or pre-made strawberry jam (check out my 10-minute berry chia jam recipe!)
1 puff pastry sheet
1 egg beaten for egg wash
Small daisy cookie cutter
Directions: Set a rack in the center in the oven and preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper. Lay your thawed puff pastry sheet(thaw according to package instructions) on the lined baking sheet. Use a rolling pin, roll out and lightly even out the puff pastry sheet. Cut out as many daisies as you can with the cookie cutter. Peel off extra puff pastry and set aside to use another time. Brush the daisy shapes with egg wash and bake for about 10-12 minutes or until golden brown. Once done, set them aside to cool then poke a little indent in the center to add your jam. Enjoy!
Kiwi Berry Greek Yogurt Parfait Cups- 4 servings
4 mini paper muffin liners
1 cup of mixed fruit(chopped kiwi and berries of your choice)
Plain Greek yogurt
Drizzle of honey
Granola, optional
Directions:
To each muffin cup, add a dollop of Greek yogurt, layer over your fruit, add a drizzle of honey and optional sprinkle of granola. Enjoy!
Little hacks: Add a bag of frozen grapes and/or frozen drinks to keep your food chilled in your picnic basket. It thaws as time passes so you can then enjoy your chilled drink and grapes as an additional snack!
