I am always on the look for breakfast options that are tasty enough to look forward to in the morning, keep my appetite satisfied, and help me avoid a sluggish start to the day. If you want to have have energy-fueled mornings like myself, these breakfast ideas can be great picks. These 3 recipes can be a perfect way to start the day since they are filled with energy sustaining complex carbs along with protein and plant fats to support fullness for longer. Savory or sweet, theres an option for each taste!
Nutty Coconut & Date Oatmeal
Ingredients:
1/2 cup oats
1 cup milk of choice
2 medjool dates, chopped
2 tbsp. unsweetened coconut flakes
1 tsp. cinnamon
1/2 tsp. vanilla
1 ounce chopped nuts of choice
Optional topping: 1/2 banana slices or other fruit of choice
Instructions:
Add oats and milk in a saucepan on medium heat.
Toss in cinnamon, vanilla, dates, coconut flakes, stir well.
Heat the oatmeal until it starts to slightly thicken (~5 minutes)
Pour intro a serving bowl. Top with nuts and fruit.
Creamy Berry Boost Smoothie
Ingredients:
1/2 cup mixed fresh or frozen berries
1/4 cup Greek yogurt(plain or less sugar)
1/4 cup of milk of choice(add/adjust to achieve thin or thick consistency)
1/2 tbsp. chia seeds
1/2 banana
1 serving of orgain vanilla protein powder (affiliate link)
Optional topping: 1 tbsp. granola for a crunch
Instructions:
Add all ingredients into a blender. Blend until smooth.
Add ice to blender or once served in a glass. (optional)
Optional: 1 tbsp. granola for a crunchy topping
Spicy Egg Wrap
Ingredients:
1-2 eggs
1/2 cup mixed vegetables of your choice (onions, bell peppers, tomatoes, spinach leaves, onions, broccoli)
1/4 tsp each of chili powder, black pepper, garlic powder, onion powder, coriander powder, dash of salt
1 tbsp. oil
Whole wheat flatbread of choice
Single serving cucumber yogurt chutney:
2 tbsp yogurt
1-2 tbsp. water(add/adjust for thick or thin consistency)
1/4 tsp. salt and pepper, 1/4 tsp. chili powder, 1/2 tsp chili flakes, 1 tsp. lemon juice, dash of garlic powder
Instructions:
Heat a light drizzle of oil in a pan. Add spices and veggies. Saute till onions become a little translucent and aromatic.
Toss in egg and scramble until egg is cooked well.
Create yogurt chutney by combining all ingredients and mixing well.
Add egg to whole wheat flatbread to create a wrap, drizzle over yogurt chutney. Toast the wrap on the pan & enjoy warm!
