Fiesta Taco Salad Bowl Recipe

Ingredients:

2 medium tortillas (whole wheat flour or other wholesome gluten free flour tortillas)

1 can, 15 oz. beans of choice (ex: black beans, chickpeas, kidney beans)

1 large tomato, diced

1 small onion, diced
-
2 cups shredded lettuce or other leafy green

1/4 cup salsa
-
3/4 cup cheese (use dairy free or eliminate this ingredient for a vegan or dairy free diet)
-
2 tbsp. sour cream or plain yogurt (use dairy free sour cream/yogurt or eliminate this ingredient for a dairy free diet)

1 medium avocado
-
1/2 fresh lemon
-
salt and pepper to taste
-
2 tsp. hot sauce of choice, optional

Cilantro for garnish

Tortilla bowl Maker/Mold
Directions:

Place the tortillas in the tortilla bowl maker and air-fry for 5 minutes at 350°F or until golden brown. You might need to air-fry each tortilla bowl one at a time due to possible lack of space in the air-fryer. If using the oven, bake both tortilla bowls on 350°F for 5-10 minutes or until golden brown.

Drain and rinse the beans. You can cook them for a few minutes on the stove if you want the beans to be softer.

Mash the avocado and season with a pinch of salt/pepper and squeeze in some lemon juice.

Once the tortilla bowls are done, let them cool down for a few minutes.

Then, toss in 1/2 cup of beans in each bowl and layer the onions, lettuce, and tomatoes. Scoop in the mashed avocado, salsa, the sour cream/yogurt, and cheese into each bowl. Lastly, drizzle over some hot sauce and lemon juice if you'd like. Garnish with some cilantro and enjoy!
Recipe Notes:

DIY Tortilla Bowl Mold: If you do not have the tortilla bowl molds, you can roll some foil into 4-5 inch balls. Then, warm the tortilla up a bit in the microwave, poke a few holes in them, and place them over the foil ball facing down and shape them into a bowl. You can bake them until they are golden brown.
