A nourishing breakfast and cup of coffee all-in-one! This coffee crunch overnight oat recipe will leave you feeling nourished and energized all morning long. It's an easy, delicious, and nutrient-packed recipe that could be enjoyed cold or heated up. This recipe is a perfect mix of creamines, crunch from the nuts and granola, and natural sweetness from vanilla and/or dates!
What I love about overnight oats is that you can make endless variations and they are perfect for meal prepping since it require just 5 minutes of prep time. Oats are also a perfect breakfast option since just 1/2 cup of old-fashioned oats provides 4 grams of fiber- great for intestinal health, blood sugar regulation, cholesterol management, and fullness! My usual overnight oat base includes chia seeds, non-fat or Greek yogurt, and your choice of milk. The chia seeds add onto the nutritional benefits like providing plant-based omega-3 fatty acids and fiber. Adding Greek yogurt is a bonus since it provides a dose of protein. For this recipe, I added dates for sweetness which provides a caramel-like sweetness that pairs deliciously with coffee!

Coffee Crunch Overnight Oats Recipe

Base Ingredients:

1/2 cup old-fashioned oats

1/2 cup milk of choice( I used low-fat dairy milk)

1-2 tbsp. nonfat vanilla yogurt

1 tbsp. chia seeds
-
1 tsp. instant coffee
-
1 chopped, medjool date
-
1 oz walnuts, crushed
-
1/4 cup granola
-
Optional: 1/2 tsp. vanilla extract, sprinkle of cinnamon
Instructions:

Mix together oats, yogurt, milk, chia seeds, and coffee in a jar.

Add toppings (granola and walnuts) before serving.

You can enjoy the overnight oats cold or heated up.
Recipe Notes:

If you have a gluten allergy, selecting certified gluten-free oats would be a better option.

You can swap dates with another sweetener of choice like honey.

If your overnight oats are too thick in the morning morning, you can add more milk.
-
Adding melted nut butter of your choice can make overnight oats thick & creamier.
